Harvest and Production
Made with the finest grapes, hand-selected from our vineyards, planted on stony soil allows better aeration and drainage of the plants, providing the ideal habitat for the grapes. Pruning and thinning of bunches during the growing season are carried out in order to obtain the highest quality grapes. At the optimal time of maturity (end of September), the grapes are harvested manually to preserve the fruit and its must. Once the grapes arrive in the winery, they are kept in cold storage for several hours before selection of the best bunches “on the table” and the finest grapes proceed to pressing and subsequent fermentation in French oak barrels –made with oak from different forests- remaining there for approximately 8 months, during which the wine is regularly submitted to the process of battonage until it achieves its characteristic creaminess.
Once the ageing process in the barrel is complete, the wine remains in the bottle for a minimum of 5 months to allow for a better refinement, thus achieving the perfect integration of the aromas and flavours of fruit and oak.
Tasting Note
Golden in colour, this wine offers a complex nose with herbaceous, smoky aromas and a vanilla base. Elegant, fresh and creamy to the palate with soft nuances of peach and a pleasant and persistent finish.
